Dressing
1 cup mayonnaise (light)
2 tbsp Dijon mustard
1/2 cup sugar (or sugar substitute)
1/2 cup vegetable oil
1/3 cup vinegar
Chop fresh vegetables. In a large bowl, combine
broccoli, cauliflower, red onion,
and pimento.
Wisk or blend until smooth all dressing ingredients.
Pour over
vegetable mixture and chill. Add raisins and
sunflower seeds to this recipe for a little extra crunch.
For my taste, I leave off the seeds and raisins,
add tomatoes and use apple cider vinegar.
