Chicken Casserole
2 cups cooked, diced chicken
Salt and pepper to taste
1 C mayo
juice of one lemon
1/2 t curry
1/2 can sliced water chestnuts
1 small jar chopped pimento drained
3 cans cream of chicken soup
1 can sliced mushrooms drained
1/2 c shredded cheddar cheese
Mix all ingredients in casserole dish. Top with
cheese or toss some in the casserole
and then add a little more on top.
Bake uncovered at 350° for 25-30 minutes.
Broccoli Rice and Chicken Casserole
6 Servings
1 cup chopped onion
2 pkgs. (10 oz) frozen broccoli, thawed and drained
2 cups cooked chicken diced
1 can cream of chicken/mushroom soup
1 cup milk
1 jar (8 oz) cheese whiz
4 cups cooked rice
Sauté onion in oil until tender. Combine
all ingredients and bake at 350° for 25-30 minutes.
