Green Tomato Parmesan

Three medium green tomatoes
1/4 cup meal
1/4 cup grated Parmesan cheese
2 tbsp all -purpose flour
3/4 tsp garlic salt
1/2 tsp oregano
1/8 tsp pepper
Salt
1 egg beaten
1/4 cup oil

Slice tomatoes into 1/4 inch slices. Lightly sprinkle slices with salt;
Drain on paper towels for 30-60 minutes. Meanwhile, combine meal,
Parmesan, flour, garlic salt, oregano, and pepper in a shallow plate.
Dip each tomato slice into egg, then into meal mixture. In a medium
skillet, heat oil on medium-high. Fry tomatoes, a few at a time, for
two minutes per side or until golden brown. Drain on a paper towel.
Serve immediately.Yield 4-6 servings.
